FinalFig 300x300 Foodie Fatales Grilled Figs with Ricotta and ThymeWhen I posted this photo recently on my Facebook and Instagram pages, it prompted a series of lustful comments,  shares and inquiries. With reason. Not only do these figs look gorgeous – they taste divine. It is no wonder to me that the fig is associated with the god Dionysus, the patron of nature and theatre….

FOODIE FATALE’S GRILLED FIGS WITH RICOTTA AND THYME
Ingredients
Sugar (preferably organic cane sugar)
Whole milk ricotta
Fresh figs
Balsamic vinegar
Olive oil
Fresh thyme

Preparation
Add sugar to ricotta to taste and mix well; place in individual serving dishes
Heat  gas grill to medium
Trim ends of figs, then cut in half lengthwise
Place figs cut side down in a plate of sugar
Sprinkle additional sugar on top
Grill figs until warm and caramelized, approximately 5-10 minutes
While figs grill, use balsamic vinegar and oil to make dressing (I use a 3:1 ratio, then add a little extra balsamic)
Add fresh thyme leaves to the dressing and mix well
Place grilled figs over ricotta, drizzle with dressing and garnish with sprigs of fresh thyme
